7 Days of Not Counting Calories | Episode 6: The Ultimate Cheesy Roasted Garlic Bread
Welcome back to 7 Days of Not Counting Calories, where we're celebrating the foods that bring us comfort, happiness, and absolutely zero guilt. Because some recipes don't need an excuse they just deserve to be enjoyed, especially when they're loaded with butter, roasted garlic, and melted cheese.
For Episode 6, we're making the ultimate Cheesy Roasted Garlic Bread. Imagine a crispy golden baguette with a soft, fluffy centre, generously slathered with homemade roasted garlic butter and topped with a thick layer of bubbling mozzarella. Every bite is buttery, garlicky, cheesy, and exactly what comfort food should taste like.
The secret to this recipe is the roasted garlic. Roasting transforms sharp garlic into something sweet, creamy, and incredibly flavourful, creating a butter that's rich without being overpowering. Paired with fresh parsley, herbs, chilli flakes, and gooey mozzarella, it's impossible to stop at just one slice.
Whether you're serving it alongside pasta, soup, or enjoying the entire loaf by itself (no judgement here!), this garlic bread is guaranteed to become a favourite.
Because today, we're still not counting calories we're counting buttery bites instead.
Note
Ingredients
2 garlic bulbs
2 tsp olive oil
100g unsalted butter, softened
2 tbsp fresh parsley, finely chopped
1 tsp mixed herbs
1 tsp chilli flakes
½ tsp black pepper
¼ tsp salt (or to taste)
1½ cups grated mozzarella cheese
1 French baguette or bread loaf
How to Make Cheesy Roasted Garlic Bread
Step 1: Roast the Garlic
Slice the tops off the garlic bulbs and drizzle them with olive oil.
Wrap each bulb tightly in aluminium foil and air fry at 180°C for 25–30 minutes, or until the cloves are soft and caramelised.
Allow the garlic to cool slightly before squeezing the roasted cloves into a bowl.
Step 2: Make the Garlic Butter
Add the softened butter, chopped parsley, mixed herbs, chilli flakes, black pepper, and salt to the roasted garlic.
Mash everything together until you have a smooth, creamy, and fragrant garlic butter.
Step 3: Assemble the Garlic Bread
Slice the baguette or bread loaf in half lengthwise.
Spread the roasted garlic butter generously over both halves, making sure to cover every corner.
Top generously with grated mozzarella cheese.
Step 4: Bake Until Golden
Bake or air fry at 180°C for 5–8 minutes, until the cheese has melted completely and turns bubbly with lightly golden spots.
Slice into portions and garnish with extra parsley and chilli flakes if desired.
Serve immediately while the cheese is perfectly melted.
Tips for the Best Garlic Bread
Roasting the garlic makes the flavour sweeter and much richer than using raw garlic.
Use softened butter so it mixes easily with the roasted garlic.
Don't be shy with the garlic butter it soaks beautifully into the bread.
Freshly grated mozzarella melts more evenly than pre-shredded cheese.
Serve immediately for the crispiest edges and the ultimate cheese pull.
My Favourite Way to Enjoy It
This garlic bread is my favourite side for creamy pasta, soups, or lasagna, but honestly, it's so good that I often eat it on its own. I love serving it fresh out of the oven with extra chilli flakes sprinkled on top and a warm bowl of marinara sauce for dipping. It's crispy, cheesy, buttery, and every bite tastes like pure comfort.
