Not every cookie needs chocolate to be unforgettable. These delicate thumbprint cookies are buttery, tender, and finished with a bright berry centre that adds just the right amount of sweetness and colour.

What makes this work

The combination of butter and cornflour creates a soft, crumbly texture that practically melts in your mouth. Thick berry jam adds a fruity contrast without making the cookies soggy.

A few things before you start

Use a thick jam rather than a runny preserve to prevent overflowing during baking. Allow the cookies to cool completely before handling, as they're delicate when warm.

Berry Thumbprint Cookies

Serves: 10–12 cookies
Prep: 15 mins
Bake: 13–15 mins

Ingredients

• Unsalted butter — 60 g
• Light brown sugar — 36 g
• Powdered sugar — 8 g
• All-purpose flour — 80 g
• Cornflour — 10 g
• Milk — up to 15 g
• Thick berry jam — 40–50 g

Method

  1. Cream butter and both sugars until light and smooth.

  2. Add flour, cornflour, and milk to form a soft dough.

  3. Transfer to a piping bag fitted with a nozzle.

  4. Pipe cookies onto a lined baking tray.

  5. Press a thumbprint into the centre of each cookie.

  6. Fill with berry jam.

  7. Bake at 170°C for 13–15 minutes.

  8. Cool completely before serving.

Storage: Store in an airtight container for up to 5 days.

How to serve it

Perfect with afternoon tea or coffee, especially when served at room temperature.
