Day 5 of 7 Days, 7 Cookie Recipes — Brown Butter Chocolate Chunk Cookies
The ultimate bakery-style cookie with deep caramel notes and pools of melted chocolate.
A great chocolate chunk cookie doesn't need fancy fillings or toppings. Browning the butter transforms a simple cookie into something rich, nutty, and packed with flavour. Add plenty of chocolate and you've got a recipe you'll come back to again and again.
What makes this work
Brown butter adds complexity and a subtle caramel flavour that regular melted butter simply can't match. The combination of dark and milk chocolate creates the perfect balance of sweetness and richness.
A few things before you start
Watch the butter carefully while browning—it can go from golden to burnt very quickly. Chilling the dough helps develop flavour and prevents excessive spreading.
