Day 4: High Protein Chocolate Mousse

Day 4 of 7 Days, 7 Protein Desserts — High Protein Chocolate Mousse

Dessert first, protein later.

This one stopped people mid-bite. A chocolate mousse with 40g protein, no cream, no eggs, no compromise on texture. It sets like the real thing, tastes like the real thing, and takes about 10 minutes to put together before the fridge does the rest.

What makes this work

Paneer blended with melted dark chocolate is one of those combinations that sounds wrong until you taste it. The fat in the chocolate and the protein density of the paneer come together into something genuinely silky and rich. No whipped cream, no gelatin. Just whole ingredients doing exactly what you need them to.

A few things before you start

Blend until completely smooth. Any graininess from the paneer will stay in the final mousse so take your time here. Use good quality dark chocolate, at least 55 to 70 percent, because it is carrying most of the flavour. The 2 to 3 hour chill is non negotiable. The mousse needs that time to set into the right thick, spoonable texture.

High Protein Chocolate Mousse

  • Serves 2.

  • Prep: 10 mins.

  • Chill: 2 to 3 hours.

  • 40g protein per batch, approx 20g per serving.

Ingredients

  • Paneer, 150g

  • Dark chocolate, 70g

  • Milk, 90g

  • Cocoa powder, 10g

  • Honey or maple syrup, 20 to 25g

  • Vanilla extract, 4g

Method

  1. Melt dark chocolate with milk over low heat or in the microwave in 30 second
    bursts until smooth and glossy.

  2. Add paneer, cocoa powder, honey, and vanilla to a blender. Pour in the melted
    chocolate mixture.

  3. Blend until completely creamy and silky with no lumps at all.

  4. Pour into serving jars or glasses.

  5. Chill for 2 to 3 hours until thick and mousse like.

  6. Top with chocolate shavings, a dusting of cocoa powder, or fresh fruit before
    serving.

Storage - Keeps in the fridge for up to 3 days. Cover the jars so the mousse does not absorb any fridge odours.


How to serve it


Straight from the jar, cold. That is genuinely all it needs. If you want to dress it up, fresh
raspberries or strawberries cut through the richness beautifully. A few chocolate shavings on top make it look like something you paid good money for.
