
Day 3 of 7 Days, 7 Protein Desserts — Soft Chocolate Protein Cookies
The easiest protein hit you will ever make.
One bowl, no oven required, and they come out looking like something from a café display. These cookies are soft, chocolatey, and genuinely satisfying. The kind of thing you make once and then have on rotation forever.
What makes these work
Protein powder pulls double duty here as both the protein source and part of the structure, so choosing a good quality one matters. Chilling the dough is what gives you that thick, chewy café style cookie instead of a flat crispy one. The air fryer keeps the outside just set and the inside perfectly soft.
A few things before you start
Do not skip the chill time. Even 10 minutes in the freezer makes a real difference to the shape and texture. Flatten the dough slightly before air frying so they spread the right amount. Let them cool for the full 10 minutes after cooking. They firm up as they cool and cutting in early means they will crumble.

Soft Chocolate Protein Cookies
Makes 2 cookies.
Prep: 10 mins. Cook: 7 to 10 mins.
Protein varies by powder used.
Ingredients
Oats flour, 25g / ¼ cup
Protein powder, 15g / 2 tbsp
Ghee, 12g / 1 tbsp
Milk, 20 to 24g / 1.5 tbsp
Brown sugar, 10g / 2 tsp
Dark chocolate chunks, 10g / 1 tbsp
Baking soda, 1 pinch
Salt, 1 pinch
Method
Mix ghee and brown sugar together until glossy.
Add milk and mix well.
Add oats flour, protein powder, baking soda, and salt. Mix until a dough forms.
Fold in the chocolate chunks.
Chill the dough overnight or for at least 10 minutes.
Shape into two balls and flatten slightly for that café style look.
Air fry at 170°C for 7 to 10 minutes.
Cool for 10 minutes before eating.
Storage - Best eaten fresh. If making ahead, store the dough in the fridge for up to 2 days and air fry when ready.
How to serve them
Straight up while still slightly warm with a glass of cold milk or a protein shake on the side. A pinch of flaky salt on top right before air frying takes them to another level.
