Soft, lightly sweet, and filled with warm coffee flavor, this Coffee Walnut Cake is one of those bakes that feels comforting from the very first bite.

Coffee and walnuts are a classic pairing. The nutty crunch balances the soft crumb while the coffee glaze adds extra flavor and moisture.

A few things before you start

Allow the coffee milk mixture to cool before adding it to the batter. Fold gently to keep the cake soft and fluffy.

Coffee Walnut Cake

Serves: 6-8 slices
Prep: 15 mins
Bake: 30-35 mins

Ingredients

Dry

• 150 g all-purpose flour
• 1½ tsp baking powder
• ½ tsp baking soda
• 1 tbsp instant coffee powder
• 50 g chopped walnuts

Wet

• 150 ml milk
• 100 g yogurt
• 60 g oil
• 90 g powdered sugar

Coffee Glaze

• 2 tbsp powdered sugar
• 1 tbsp water
• 1 tsp instant coffee

Method

  1. Preheat oven to 170°C.

  2. Dissolve coffee in warm milk.

  3. Mix wet ingredients.

  4. Fold in dry ingredients and walnuts.

  5. Bake for 30-35 minutes.

  6. Cool completely and glaze.

Storage

Store in an airtight container for up to 3 days.

How to serve it

Perfect with a cappuccino or latte.
