A few things before you start

Base
• Digestive biscuits — 120 g
• Melted butter — 50 gFilling
• Cream cheese — 250 g
• White chocolate, melted and cooled — 150 g
• Chilled whipping cream — 120 g
• Vanilla extract — ½ tspTopping
• White chocolate shavings
• Strawberries or raspberries
• Edible flowers
Method
Crush biscuits and mix with melted butter.
Press into a 6-inch pan and chill.
Melt the white chocolate and allow it to cool slightly.
Whip cream to soft peaks.
Beat cream cheese until smooth.
Mix in white chocolate.
Fold in whipped cream gently.
Pour onto the chilled base.
Smooth the top and chill for 6–8 hours or overnight.
Decorate before serving.
Storage: Store refrigerated for up to 4 days in an airtight container.
How to serve it
Top with fresh berries just before serving for a fresh contrast to the creamy filling.
