
Day 1 of 7 Days, 7 Protein Desserts — Protein Date Cake
The one that started it all.
I wanted Day 1 to hit hard and this Date Cake did exactly that. No whey protein, no weird ingredients, no compromises on taste. Just a soft, moist, deeply sweet cake that honestly had me questioning whether I’d made the healthy version or the indulgent one. Spoiler: it’s both.
What makes this one different
Dates are doing all the heavy lifting here, they’re the sweetener, the binder, and a big part of the moisture. Blending them with protein curd and ghee gives you a batter that’s naturally rich without needing butter or refined sugar. The almond flour adds a tender crumb, and the walnuts give every bite a little bite back. 25g protein, no whey, all real food.
A few things before you start
Use soft, pitted Medjool or Safawi dates, yours are dry, soak them in warm milk for 10 minutes before blending. Protein curd works best at room temperature so it blends smooth. Don’t skip the rest time after baking — this cake slices cleanly once it’s fully cooled, and the texture settles beautifully.

Serves 6 | Prep: 15 mins | Bake: 30–35 mins
25g protein per serving (approx)
Ingredients
• Dates — 80g / ½ cup
• Protein curd — 80g / ⅓ cup
• Ghee — 35g / 3 tbsp
• Milk — 70g / ¼ cup + 1 tbsp
• Whole wheat flour — 85g / ⅔ cup
• Almond flour — 30g / ¼ cup
• Baking powder — 1 tsp
• Baking soda — ¼ tsp
• Cinnamon — ¼ tsp
• Walnuts — 50g / ½ cup, roughly chopped
Method
Blend dates, protein curd, milk, and ghee until completely smooth.
In a separate bowl, whisk together whole wheat flour, almond flour, baking powder, baking soda, and cinnamon.
Fold the dry ingredients into the wet mixture until just combined — don’t overmix.
Fold in the walnuts generously.
If the batter feels too thick, loosen with 1–2 tbsp milk.
Pour into a greased 6-inch ring tin.
Bake at 170°C for 30–35 minutes. A skewer should come out clean. Cool
completely before slicing.
Storage: Keeps well at room temperature for 2 days, refrigerated for up to 5.
How to serve it
Slice and eat as is, it needs nothing. But if you want to take it somewhere special, a spoon of Greek yogurt on the side or a light drizzle of honey works beautifully. Great as a post-workout treat or a 4pm sweet fix that actually keeps you full.
