1 cup (125g) all-purpose flour
⅓ cup + 1 tbsp (90g) warm milk
1 tsp (3g) instant yeast
2 tsp (10g) sugar
½ tsp (2g) salt
2 tsp (10g) unsalted butter, softened
120g mozzarella cheese, cut into 3 sticks
1½–2 cups (125–150g) panko breadcrumbs
3 tbsp (25g) all-purpose flour, for dusting

How to Make Korean Corn Dogs
Step 1: Prepare the Dough
Combine the warm milk, sugar, and instant yeast in a bowl. Let it rest for 5–10 minutes until the mixture becomes foamy.
Add the flour and salt, then mix until no dry flour remains. Stir in the softened butter until you have a smooth, sticky dough. There's no need to knead this dough.
Step 2: Let the Dough Rise
Cover the bowl and allow the dough to rise for 45–60 minutes, or until it has doubled in size.
Step 3: Prepare the Cheese
Insert skewers into the mozzarella sticks and lightly dust each one with all-purpose flour. This helps the dough stick evenly around the cheese.
Step 4: Wrap the Corn Dogs
Divide the dough into three equal portions.
Flatten each portion slightly and wrap it tightly around a mozzarella stick, making sure the cheese is completely sealed inside.
Step 5: Coat with Panko
Roll each corn dog generously in panko breadcrumbs, gently pressing the crumbs onto the dough so they adhere well. This creates the signature crispy Korean corn dog coating.
Step 6: Fry Until Golden
Heat oil to 170°C (340°F).
Carefully fry the corn dogs for 4–6 minutes, turning occasionally until they're evenly golden brown, crispy, and cooked through.
Let them rest for a minute or two before serving.

Make sure the milk is warm, not hot, so the yeast activates properly.
Dust the mozzarella with flour before wrapping to help the dough stick.
