The perfect way to kick off a week dedicated to coffee desserts.

There’s something about coffee and chocolate together that just works. These Espresso Chocolate Chunk Cookies are chewy in the center, slightly crisp around the edges, and packed with pools of melted dark chocolate. The espresso doesn't overpower the cookie, it simply makes the chocolate taste richer, deeper, and even more irresistible.

What makes this work

Browned butter gives the cookies a rich, nutty flavor that pairs beautifully with coffee. The espresso powder enhances the chocolate without making the cookies taste bitter, creating the perfect balance of sweetness and depth.

A few things before you start

Don't skip chilling the dough. It helps the flavors develop and prevents the cookies from spreading too much in the oven. Also, allow the browned butter to cool slightly before mixing in the sugars.

Makes: 10-12 cookies
Prep: 15 mins
Chill: 30-45 mins
Bake: 10-12 mins

Ingredients

• 100 g unsalted butter
• 100 g brown sugar
• 30 g granulated sugar
• 45 g milk
• 2 g instant espresso powder
• 150 g all-purpose flour
• 10 g cornstarch
• 3 g baking soda
• 100 g dark chocolate chips or chunks

Method

  1. Brown the butter and allow it to cool slightly.

  2. Mix both sugars into the butter until combined.

  3. Dissolve the espresso powder in the milk and add to the mixture.

  4. Fold in flour, cornstarch, and baking soda.

  5. Stir in the chocolate chunks.

  6. Chill the dough for 30-45 minutes.

  7. Scoop into cookie dough balls and place on a lined baking tray.

  8. Bake at 175°C for 10-12 minutes.

  9. Allow the cookies to cool on the tray for 5 minutes before serving.

Storage

Store in an airtight container for up to 4 days. Warm for a few seconds before serving to get those gooey chocolate pockets back.

How to serve it

Enjoy with a hot cappuccino, cold brew, or simply on their own while they're still slightly warm.
